Step-by-Step Instructions
  1. In a food processor, combine pumpkin seeds and hemp seeds. Pulse until it resembles a fine meal, about 30 seconds.
  2. Add chia seeds, cocoa powder, Medjool dates, vanilla extract, sea salt, sunflower seed butter, and maple syrup to the processor. Blend for 1–2 minutes until well-combined.
  3. Check the texture. If too dry, gradually add 1–2 tablespoons of water while blending until it holds together.
  4. Scoop out small portions and roll them into 18 evenly sized balls, about 1 inch in diameter.
  5. Place the energy balls in a parchment-lined container and refrigerate for at least 30 minutes.
