Step-by-Step Instructions for Easy Chicken, Poblano, and Black Bean Soup
  1. In a large pot, melt 2 tablespoons of unsalted butter or heat olive oil over medium heat. Add ½ cup of chopped yellow onion and 1 diced poblano pepper. Sauté for 5–6 minutes until translucent.
  2. Stir in 2 cups of shredded chicken, 1 can of drained black beans, and ½ cup of frozen corn. Pour in 3 cups of chicken broth and sprinkle the seasoning blend over the mixture. Simmer uncovered for 15 minutes.
  3. Reduce heat to low and stir in ½ cup of heavy cream and ½ cup of shredded cheese. Simmer for an additional 15 minutes.
  4. Remove from heat and stir in 2 teaspoons of fresh lime juice. Garnish with fresh cilantro if desired and serve warm.
