Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add diced yellow onion and bell pepper, sautéing for 3–4 minutes until tender.
  2. Drain and rinse 1 can of black beans, patting them dry. Mash the beans in a mixing bowl until mostly chunky.
  3. Add the sautéed vegetable mixture to the mashed black beans. Incorporate beaten eggs, shredded cheese, instant oats, sriracha, chili powder, cumin, and salt. Mix thoroughly.
  4. Cover the bowl and chill in the refrigerator for 15–20 minutes.
  5. Shape the mixture into 8 equal patties, about 1 inch thick.
  6. Cook the patties using your preferred method: skillet, baking, grilling, or air frying.
  7. Serve cooked patties on toasted buns with your favorite toppings.
