- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add diced yellow onion and bell pepper, sautéing for 3–4 minutes until tender.
- Drain and rinse 1 can of black beans, patting them dry. Mash the beans in a mixing bowl until mostly chunky.
- Add the sautéed vegetable mixture to the mashed black beans. Incorporate beaten eggs, shredded cheese, instant oats, sriracha, chili powder, cumin, and salt. Mix thoroughly.
- Cover the bowl and chill in the refrigerator for 15–20 minutes.
- Shape the mixture into 8 equal patties, about 1 inch thick.
- Cook the patties using your preferred method: skillet, baking, grilling, or air frying.
