- Pat the chicken dry and season with salt, pepper, oregano, paprika, and lemon zest. Let it rest for 10 minutes.
- Preheat a large skillet over medium-high heat. Add olive oil until shimmering.
- Sear the chicken for 3-4 minutes on each side until golden brown. Remove from skillet and let rest.
- Sauté onion and bell peppers in the skillet for 2-3 minutes, then add zucchini and cook until crisp-tender.
- Stir in garlic and cook for an additional 30 seconds.
- Add cherry tomatoes, olives, and chicken broth. Simmer for 1 minute.
- Return chicken to skillet, add lemon juice, and toss everything together for 1-2 minutes.
- Sprinkle with feta and parsley before serving.
