Ingredients
  

For the Chicken
  • 1 pound chicken (breast or thighs) substitute with chickpeas or firm tofu for vegetarian option
For the Veggies
  • 2 tablespoons extra-virgin olive oil
  • 2 bell peppers sliced
  • 1 zucchini sliced
  • 1 cup cherry tomatoes halved
For the Flavor
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 3 cloves garlic minced
  • 1 cup vegetable or chicken broth preferably broth, or use water
  • 1 lemon juice and zest
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin

Method
 

Preparation
  1. Pat the chicken dry and season with salt, pepper, oregano, paprika, and lemon zest. Let it rest for 10 minutes.
  2. Preheat a large skillet over medium-high heat. Add olive oil until shimmering.
  3. Sear the chicken for 3-4 minutes on each side until golden brown. Remove from skillet and let rest.
  4. Sauté onion and bell peppers in the skillet for 2-3 minutes, then add zucchini and cook until crisp-tender.
  5. Stir in garlic and cook for an additional 30 seconds.
  6. Add cherry tomatoes, olives, and chicken broth. Simmer for 1 minute.
  7. Return chicken to skillet, add lemon juice, and toss everything together for 1-2 minutes.
  8. Sprinkle with feta and parsley before serving.
