Method
 

Step-by-Step Instructions
  1. Prep the Pan: Line an 8" x 4" loaf pan with parchment paper.
  2. Mix Wet Ingredients: Combine pumpkin puree, almond butter, coconut oil, maple syrup, and vanilla extract in a bowl.
  3. Add Dry Ingredients: Fold in plant-based protein powder, cinnamon, and salt into the wet mixture.
  4. Fold in Chocolate Chips: Add dark chocolate chips and stir until evenly distributed.
  5. Press into Pan: Transfer the mixture into the lined loaf pan and pack it down firmly.
  6. Make the Topping: Melt dark chocolate chips in a saucepan, remove from heat and mix in almond butter.
  7. Add Topping: Pour the melted chocolate mixture over the pressed base and spread evenly.
  8. Chill: Place the loaf pan in the refrigerator for at least 1 hour to set.
  9. Cut and Serve: Lift the bars out of the pan and slice into desired sizes.
