Method
 

Preparation Steps
  1. In a blender, add the strawberries, blueberries, finely chopped spinach, and finely grated carrots. Blend on high for about 1-2 minutes until the mixture is smooth and vibrant.
  2. Transfer the blended mixture to a medium saucepan and stir in the unsweetened applesauce, honey (or maple syrup), fresh lemon juice, and vanilla extract. Heat this mixture over medium heat for about 3-5 minutes, stirring constantly.
  3. Sprinkle the gelatin evenly over the warm fruit-vegetable mixture. Allow it to swell for 1 minute, then stir until the gelatin is completely dissolved, about 2-3 minutes.
  4. Remove the saucepan from heat and let the mixture cool slightly for about 5 minutes. Prepare your silicone molds or parchment-lined pan.
  5. Pour the mixture into molds or spread evenly in the pan.
  6. Refrigerate for at least 2 hours to allow the snacks to set fully.
  7. Once set, remove the snacks from the molds or cut into squares if using a pan. Store in an airtight container in the fridge for up to one week.
