  • 1 cup apple cider can substitute with diluted apple juice
For the Glaze
  • 0.5 cup apple cider ensure it's fresh
  • 2 tablespoons salted butter
  • 0.5 cup granulated sugar adjust to taste
  • 2 tablespoons demerara or turbinado sugar can use regular sugar
  • 1 teaspoon cinnamon

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (160°C) and grease a 12-cup bundt pan.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each, then blend in the vanilla extract.
  5. Gradually combine the dry ingredients with the butter mixture, alternating with the apple cider.
  6. Pour the batter into the prepared bundt pan and bake for 40-50 minutes or until a toothpick comes out clean.
  7. In a saucepan, simmer the apple cider for the glaze until reduced, then mix in the butter and sugar until combined.
  8. Cool the cake for 10 minutes before inverting onto a wire rack, then brush with warm glaze and sprinkle with cinnamon sugar.
