  • 8 oz Rotini Pasta Cook until al dente.
  • 1 cup Cucumbers Diced, or substitute with bell peppers.
  • 1 cup Cherry Tomatoes Halved, or substitute with diced tomatoes.
  • 1/2 cup Olives Sliced, choose green or black.
  • 1/4 cup Fresh Parsley Chopped, or substitute with basil or cilantro.
For the Dressing
  • 1/2 cup Zesty Italian Dressing Or Greek vinaigrette for Mediterranean flavor.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Add the rotini pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Dice the cucumbers, halve the cherry tomatoes, and slice the olives. Chop the parsley.
  3. In a large mixing bowl, combine the cooled pasta, cucumbers, tomatoes, olives, and parsley. Drizzle with dressing and toss gently.
  4. Taste and adjust seasoning with salt and pepper as needed. Stir well.
  5. Portion the salad into individual cups, ensuring even distribution.
  6. Cover and refrigerate for at least 1-2 hours before serving.
