- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
- In a large mixing bowl, mash the very ripe bananas until smooth, then mix in the peanut butter and maple syrup.
- Sprinkle the oat flour and baking soda into the mixture and stir until just combined, avoiding overmixing.
- Carefully fold in the chocolate chips, leaving some for topping if desired.
- Pour the mixture into the lined baking dish and smooth the top. Optionally sprinkle flaky sea salt on top.
- Bake for 20-25 minutes until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the blondies to cool in the pan for at least 10 minutes before lifting out and slicing into squares.
