  • 1 cup mushrooms (sliced) any variety can be used
  • 4 cups chicken stock use vegetable broth for vegetarian/vegan
  • 2 cups water to dilute the stock
  • 3 tablespoons soy sauce tamari can be used for gluten-free
For the Filling
  • 2 cups baby bok choy spinach or kale can work
  • 2 servings ramen noodles discard seasoning packets
  • 1 cup sliced grilled chicken substitute with firm tofu for vegetarian
  • green onions for garnish
  • sesame seeds optional but recommended

Method
 

Step-by-Step Instructions
  1. Heat sesame oil in a large pot over medium heat. Add minced garlic and ginger paste, stirring for 30-60 seconds until fragrant and golden.
  2. Add sliced mushrooms to the pot and sauté for 3-5 minutes until they soften and turn golden brown.
  3. Pour in chicken stock, water, and soy sauce. Bring to a boil, then reduce heat to low and simmer for at least 10 minutes.
  4. In a separate pot, bring water to a boil and cook ramen noodles according to package instructions, usually 2-4 minutes. Drain and set aside.
  5. Stir in chopped baby bok choy to broth in the last 2 minutes of simmering, cooking until bright green and tender.
  6. Divide ramen noodles among serving bowls. Ladle hot broth over noodles, ensuring each bowl includes mushrooms and bok choy.
  7. Top bowls with grilled chicken or tofu, soft-boiled eggs, green onions, and sesame seeds. Serve hot.
