For the Sauce
  • 2 tablespoons brown sugar or coconut sugar/maple syrup
  • 1/4 cup soy sauce can use tamari for gluten-free
  • 1 tablespoon sesame oil or olive oil
  • 1 dash Sriracha to taste
For the Noodles
  • 4 medium zucchini spiralized
  • 2 chopped green onions for garnish
For Garnish
  • 1 tablespoon sesame seeds optional

Step-by-Step Instructions
  1. In a mixing bowl, whisk together the brown sugar, soy sauce, grated ginger, sesame oil, and Sriracha. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Sauté minced garlic until fragrant.
  3. Add ground beef to the skillet, breaking it into small pieces. Cook until browned, about 3-5 minutes.
  4. Pour the prepared sauce over the browned beef and stir well. Add spiralized zucchini and chopped green onions, mixing together.
  5. Let the mixture simmer for about 2 minutes, stirring occasionally, until zucchini is heated through.
  6. Remove from heat, serve immediately, and garnish with sesame seeds and additional green onions if desired.
