Step-by-Step Instructions
  1. Begin by heating a large skillet over medium heat and adding 2 tablespoons of butter. Allow the butter to melt completely.
  2. Add one diced onion to the skillet and sauté for about 3-4 minutes.
  3. Stir in 1 cup of frozen peas and carrots and cook for an additional 2-3 minutes.
  4. Now, add 4 cups of cold, cooked rice to the skillet along with 4-5 tablespoons of soy sauce.
  5. Push the rice mixture to one side of the skillet, creating space. Pour 2 beaten eggs into the empty space and scramble.
  6. Taste your fried rice and adjust the seasoning as needed, adding more soy sauce if desired.
  7. Remove the skillet from heat and serve your Fried Rice hot.
