  • 1 cup Mini Cucumbers Use standard cucumbers after removing seeds to avoid sogginess
  • 1 cup Orange Bell Pepper Any bell pepper color works if preferred
  • 1/4 cup Red Onion Soaking it in water tempers its flavor
  • Shaved Parmesan Optional; omit for a dairy-free dish

Method
 

Preparation
  1. In a mini food processor, combine olive oil, lemon juice, honey, mint, basil, chives, garlic powder, and salt. Blend for about 30 seconds until the herbs are finely chopped and the dressing is well combined.
  2. Thaw frozen corn in microwave on low heat for 2-3 minutes until just defrosted and cool enough to handle.
  3. In a large mixing bowl, combine cooled corn, halved cherry tomatoes, diced mini cucumbers, diced orange bell pepper, and finely diced red onion.
  4. Add the dressing from step 1 on top of the vegetables and gently toss everything together until evenly coated.
