Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease your baking dish.
  2. In a large mixing bowl, combine the apricots, lemon zest, cornstarch, ground ginger, and ground cinnamon. Toss gently until well-coated.
  3. In another bowl, mix the oats, flour, and cinnamon. Cut in the butter until resembling coarse crumbs, then stir in honey or maple syrup.
  4. Transfer the apricot mixture into the greased baking dish and sprinkle the oat topping evenly over it.
  5. Bake for about 32 minutes, until the topping is golden brown and the edges bubble.
