  1. In a saucepan, combine 4 cups of filtered water, 1 cup of fresh mint leaves, and 1 cup of organic cane sugar. Bring the mixture to a boil over medium heat, whisking until the sugar completely dissolves. Once boiling, reduce the heat and simmer gently for 2-3 minutes until the syrup thickens slightly. Remove from heat and let it cool for about 30 minutes, then strain out the mint leaves.
