- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 diced yellow onion and sauté for about 7 minutes until soft.
- Add 1 cup of rinsed quinoa, stirring to toast for about 30 seconds. Pour in 2 cups of water, 2 tablespoons of apple cider vinegar, the juice of 1 lemon, salt, and black pepper. Bring to a simmer, cover, and cook for 12-15 minutes.
- While the quinoa cooks, chop green onions, nectarines, corn, cucumber, and cherry tomatoes. Tear or chop basil leaves.
- In a large mixing bowl, combine the cooked quinoa with the chopped vegetables. Gently fold together.
- Serve warm or chill for at least 30 minutes for enhanced flavor.
