Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, and a pinch of salt.
  3. In another bowl, mix together 1 cup of cottage cheese, 2 large eggs, 2 tablespoons of olive oil, 2 minced garlic cloves, and ½ cup of grated Parmesan cheese until fully combined.
  4. Gradually fold the wet mixture into the dry ingredients, stirring until a soft, slightly sticky dough forms.
  5. Lightly flour a clean surface and turn out the dough. Knead gently for about 2-3 minutes until smooth but soft.
  6. Divide the dough into approximately 8 equal portions and roll each piece into a ball, then poke a hole in the center to form a bagel.
  7. Transfer the bagels onto the prepared baking tray, ensuring space between them. Sprinkle extra grated Parmesan cheese on top.
  8. Bake for 20-25 minutes until golden brown. Keep an eye on them.
  9. Allow to cool slightly on a wire rack for 5-10 minutes before serving.
