Step‑by‑Step Instructions
  1. Wash and halve the baby potatoes, ensuring they are clean and ready to soak up all the delicious flavors. While the potatoes dry, mince the garlic finely.
  2. In a small bowl, combine olive oil, Italian seasoning, salt, black pepper, and optional red pepper flakes. Rub this mixture all over the chicken.
  3. In your slow cooker, place the halved baby potatoes and then lay the seasoned chicken breasts on top.
  4. Pour the chicken broth gently over the chicken and potatoes, ensuring they are submerged.
  5. Evenly sprinkle the minced garlic and grated Parmesan cheese over the chicken.
  6. Cover the slow cooker and set it to cook on low for 6–7 hours or on high for 3–4 hours.
  7. Once cooked, carefully remove the chicken and serve with sauce, garnished with fresh parsley if desired.
