- Start by thinly slicing and chopping 4-5 ripe kiwifruit, yielding around 2 cups. Place the chopped kiwifruit into a large microwave-safe bowl.
- To the bowl with kiwifruit, add 1 can (8 oz.) of undrained crushed pineapple and 1/4 cup of fresh lime juice. Stir the mixture thoroughly.
- Microwave the combined mixture on high power for 10-12 minutes, pausing every 2 minutes to stir.
- Carefully remove the bowl from the microwave and stir in 1 pouch (3 oz.) of liquid pectin, followed by a few drops of green food coloring if desired.
- Pour the hot kiwi mixture into sanitized jars or freezer containers while it's still warm.
- Allow the jelly to cool to room temperature, then let it sit overnight while it thickens.
