  • 1/4 cup Lime Juice Fresh is best
  • 1 can (8 oz.) Crushed Pineapple Use undrained for right consistency
  • 1 pouch (3 oz.) Liquid Pectin Can be swapped with powdered pectin
  • few drops Green Food Coloring Optional for visual appeal

Method
 

Step-by-Step Instructions
  1. Start by thinly slicing and chopping 4-5 ripe kiwifruit, yielding around 2 cups. Place the chopped kiwifruit into a large microwave-safe bowl.
  2. To the bowl with kiwifruit, add 1 can (8 oz.) of undrained crushed pineapple and 1/4 cup of fresh lime juice. Stir the mixture thoroughly.
  3. Microwave the combined mixture on high power for 10-12 minutes, pausing every 2 minutes to stir.
  4. Carefully remove the bowl from the microwave and stir in 1 pouch (3 oz.) of liquid pectin, followed by a few drops of green food coloring if desired.
  5. Pour the hot kiwi mixture into sanitized jars or freezer containers while it's still warm.
  6. Allow the jelly to cool to room temperature, then let it sit overnight while it thickens.
