- Preheat the oven to 350°F (175°C). Gather baking supplies, including a muffin pan and liners.
- In a large mixing bowl, whisk together Kodiak Buttermilk Flapjack Mix, ground cinnamon, pumpkin pie spice blend, baking powder, and a pinch of salt.
- In a separate bowl, mash the ripe banana. Add pumpkin purée, Greek yogurt, vanilla extract, eggs, honey, and avocado oil. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Line muffin pan with liners and fill each cavity with batter, optionally sprinkling with brown sugar.
