Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add ground turkey and season with salt, pepper, paprika, and thyme. Cook for 5-7 minutes until browned.
  3. Stir in diced onion and chopped bell pepper. Sauté for about 5 minutes until vegetables are soft.
  4. Add fresh spinach or kale and cook until wilted, about 1-2 minutes.
  5. In a large mixing bowl, combine turkey mixture with cubed sweet potatoes and toss well.
  6. Transfer to greased casserole dish, top with cheddar and mozzarella cheese. Bake for 25-30 minutes until cheese is melted and bubbly.
