- Preheat your oven to 375°F (190°C) and gather your ingredients.
- In a large skillet, heat olive oil over medium heat. Add lean ground turkey, season with salt, pepper, paprika, and thyme, cooking for about 5–7 minutes.
- Add diced onion and bell pepper to the skillet, sauté for another 5 minutes until translucent.
- Toss in fresh spinach or kale until wilted, about 2–3 minutes.
- In a mixing bowl, combine the turkey-veggie mixture with cubed sweet potatoes and mix well.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Sprinkle shredded cheddar and mozzarella cheese over the top.
- Bake in the preheated oven for 25–30 minutes until cheese is golden brown.
- Allow to cool for a few minutes before serving.
