  • 1 teaspoon Dried Thyme can substitute with fresh thyme

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and gather your ingredients.
  2. In a large skillet, heat olive oil over medium heat. Add lean ground turkey, season with salt, pepper, paprika, and thyme, cooking for about 5–7 minutes.
  3. Add diced onion and bell pepper to the skillet, sauté for another 5 minutes until translucent.
  4. Toss in fresh spinach or kale until wilted, about 2–3 minutes.
  5. In a mixing bowl, combine the turkey-veggie mixture with cubed sweet potatoes and mix well.
  6. Transfer the mixture to a greased baking dish, spreading it evenly.
  7. Sprinkle shredded cheddar and mozzarella cheese over the top.
  8. Bake in the preheated oven for 25–30 minutes until cheese is golden brown.
  9. Allow to cool for a few minutes before serving.
