Step-by-Step Instructions for Healthy Homemade McGriddles
  1. In a mixing bowl, combine the Bisquick and protein powder, whisking until well blended. Gradually add in the milk and maple extract, stirring gently until the batter reaches a smooth consistency that flows easily from a spoon. Set the batter aside while you heat the skillet.
  2. Heat a nonstick skillet over medium heat, lightly greasing it with cooking spray. Pour 2 tablespoons of the pancake batter into the skillet to form small circles, cooking for about 1-2 minutes until the edges bubble and the bottoms turn golden brown. Flip and cook for an additional 60-90 seconds until the other side is golden as well.
  3. In another skillet, spray a light coat of cooking spray and heat over medium-low. Crack the eggs into a bowl and whisk until blended. Pour the eggs into the warmed skillet, allowing them to spread out in a thin layer. After 10-15 seconds, when the edges start to set, gently fold the eggs into a rectangle, cooking until just set, then remove from heat.
