Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and prepare an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth.
  3. Gradually mix in the oat flour, rolled oats, pumpkin pie spice, and baking soda until just incorporated.
  4. Carefully fold in optional chocolate chips or nuts.
  5. Pour the batter into the prepared baking pan and spread evenly; sprinkle extra chocolate chips if desired.
  6. Bake for 24-26 minutes until golden brown and a toothpick comes out clean.
  7. Allow to cool in the pan for at least 10 minutes before lifting out and slicing into bars.
