Ingredients
  

For the Chicken
  • 2 pieces Chicken Breasts boneless skinless
  • 1-2 tablespoons Olive Oil or Avocado Oil for cooking
For the Rice Base
  • 2 cups Cooked Rice jasmine, brown, or white rice
For the Corn Topping
  • 1 cup Corn Kernels fresh, frozen, or canned
For Seasoning
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1 teaspoon Chili Powder adjust to taste
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
For the Dressing
  • 1/2 cup Plain Greek Yogurt or regular yogurt/sour cream
  • 2 tablespoons Mayonnaise optional for richness
  • 2 cloves Minced Garlic for sauce
For Garnishing
  • 1 whole Lime for juice and garnish
  • 1/2 cup Red Onion sliced
  • 1/4 cup Cilantro fresh, chopped

Method
 

Preparation
  1. Begin by washing and preparing your ingredients. Cut the chicken breasts into uniform bite-sized cubes for even cooking.
  2. If using fresh corn, remove the kernels from the cob; otherwise, measure out your frozen or canned corn. Set everything aside in small bowls.
Cooking
  1. Heat 1 to 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken cubes and season with salt, pepper, smoked paprika, chili powder, and garlic powder.
  2. Sauté the chicken for about 7–10 minutes until golden brown and cooked through.
  3. Once the chicken is cooked, stir in the prepared corn. Cook for an additional 3–5 minutes until the corn is fragrant and tender.
Saucing and Combining
  1. In a small mixing bowl, combine the Greek yogurt, mayonnaise, minced garlic, lime juice, and lime zest. Stir until smooth.
  2. After the chicken and corn mixture is ready, remove from heat. Add the cooked rice and squeeze lime juice over it. Gently fold all ingredients together.
Serving
  1. Spoon the chicken, corn, and rice mixture into individual bowls. Garnish with sliced red onion, chopped cilantro, and a drizzle of the creamy sauce.
