- Set your Instant Pot to sauté mode. Melt 4 tablespoons of butter and add the 10 sliced yellow onions. Stir occasionally for about 15 minutes until caramelized.
- Once caramelized, add 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon dried thyme, and 2 tablespoons flour. Stir well.
- Pour in 1/2 cup of red wine. Stir for 1-2 minutes to deglaze the pot.
- Add 6 cups of beef broth, ensuring ingredients are mixed well. Secure the lid and set to high pressure for 5 minutes.
- After cooking, perform a quick release of pressure. Open the lid and enjoy the aroma.
- Slice the baguette and grate the Gruyere cheese. Preheat your oven to the broil setting.
- Ladle soup into bowls, place baguette slices on top, and sprinkle grated cheese over the bread.
- Broil the bowls for 2-3 minutes until cheese is melted and bubbly.
