- Heat a non-stick skillet over medium heat for about 2 minutes.
- Spread a layer of unsalted butter on one side of a slice of bread, then place it butter-side down in the skillet.
- Spread spinach pesto on top of the bread in the pan.
- Layer broken fresh burrata pieces on the pesto.
- Top with another slice of bread and spread butter on the outer side.
- Cook for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes.
- Remove from skillet, let rest for a minute, slice, and enjoy!
