Crust Preparation
- In a large mixing bowl, combine all-purpose flour, butter, sugar, and salt. Blend until the mixture resembles coarse crumbs. Press the dough into a tart pan and refrigerate for 30 minutes.
Baking the Crust
- Preheat your oven to 350°F (175°C). Bake the chilled crust for about 20 minutes or until the edges are golden brown. Allow to cool completely.
Custard Preparation
- Heat together the milk and heavy cream over medium heat. Whisk egg yolks with cornstarch until smooth. Gradually mix in the hot milk mixture. Return to saucepan and cook until thickened, about 5-7 minutes.
Tart Assembly
- Pour the custard into the cooled crust and smooth the top. Chill for at least 1 hour until set.
Topping the Tart
- Arrange fresh strawberries on top. Warm apricot jam and brush over strawberries for shine.
