Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter with granulated and brown sugar until light and fluffy.
  4. Add the eggs one at a time, followed by vanilla extract.
  5. Alternate adding the dry ingredients and buttermilk to the butter mixture.
  6. Fold in melted white chocolate, coconut, and pecans.
  7. Divide the batter into the prepared pans and bake for 25-30 minutes.
  8. Cool in the pans for 10 minutes, then transfer to a wire rack.
  9. For frosting, beat cream cheese and butter, add sugar, vanilla, and melted white chocolate.
  10. Once cool, frost the cakes with the cream cheese frosting.
  11. Garnish as desired and serve.
