  • 4 fillets Salmon Use fresh or frozen, skin-on for flavor
  • 3 cloves Garlic Fresh, minced

  • to taste Black Pepper
For the Herb Crust
  • 1/4 cup Fresh Parsley Chopped
  • 1/4 cup Fresh Basil Chopped
  • 2 tablespoons Olive Oil
For the Topping
  • 1 cup Cherry Tomatoes Halved
  • 2 tablespoons Balsamic Vinegar

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. Mince garlic and chop parsley and basil, mixing them with olive oil in a bowl.
  3. Arrange cherry tomatoes on one side of the sheet pan, drizzle with balsamic vinegar, olive oil, salt, and pepper.
  4. Season salmon fillets with salt and pepper and place on the other side of the pan.
  5. Spread the herb mixture evenly over the salmon fillets.
  6. Bake in the preheated oven for about 20 minutes or until salmon is light pink and flakes easily.
