Method
 

Preparation Steps
  1. Wash the cucumbers thoroughly under cool water and slice them into thin rounds or half-moons, about ¼ inch thick.
  2. In a small bowl, combine honey, lime juice, a pinch of salt, and black pepper, whisking until the mixture is uniform.
  3. In a large mixing bowl, add the sliced cucumbers and toss them with the dressing until evenly coated.
  4. If adding, fold in the cherry tomatoes and feta cheese gently into the salad mixture.
  5. Let the salad sit at room temperature or in the fridge for about 10 minutes before serving.
  6. Give the salad a final toss and serve immediately, optionally garnishing with lime wedges or fresh herbs.
