- Preheat the oven to 400°F (200°C) and grease a baking sheet with nonstick cooking spray.
- Whisk together all-purpose flour, baking powder, kosher salt, and ground cinnamon in a bowl.
- In another bowl, whisk together melted butter and granulated sugar until frothy, then add egg, vanilla extract, and applesauce.
- Gently stir dry mixture into wet mixture and fold in diced apples until just combined.
- Scoop out portions of the batter onto the prepared baking sheet, spacing them a few inches apart.
- Bake for about 10 minutes, then broil on high for 2-4 minutes until golden.
- While baking, whisk together powdered sugar and apple cider until pourable.
- Brush the warm fritter bites with apple cider glaze once baked.
- Allow glazed fritter bites to sit for about 15 minutes before serving.
