Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter until well-blended. Press into a springform pan.
  2. Bake for 8-10 minutes until lightly golden. Allow to cool completely.
  3. In a mixing bowl, beat cream cheese until smooth. Gradually add sugar, blend well. Add eggs one at a time, then stir in sour cream, vanilla, and mashed bananas.
  4. Pour filling over cooled crust. Place the springform pan in a larger baking dish filled with hot water and bake for 60-70 minutes.
  5. After baking, turn off the oven and leave the cheesecake inside for an hour. Allow to cool at room temperature, then refrigerate for at least 4 hours.
  6. Before serving, slice fresh bananas and arrange on top. Optionally add whipped cream.
