Ingredients
  

For the Meatballs
  • 1 pound Ground Beef Opt for lean for healthier choice
  • 1/2 cup Breadcrumbs Substitute with gluten-free breadcrumbs if needed
  • 1 large Egg
  • 1/4 cup Parsley Fresh preferred, dried can substitute
  • 2 cloves Garlic Minced
  • 1 medium Onion Finely diced; can use shallots
  • 1 large Lemon Juice and zest required
  • 1 teaspoon Dried Oregano Can substitute with Italian seasoning
  • to taste Salt & Pepper Adjust to preference
  • 2 tablespoons Olive Oil For browning
For the Sauce
  • 1 cup Chicken Broth Vegetable broth for vegetarian option

Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. Finely dice the onion and parsley, and mince the garlic. Zest the lemon and then juice it.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, egg, parsley, garlic, onion, lemon zest, oregano, salt, and pepper.
  4. Wet hands to prevent sticking and shape the mixture into 1½-inch meatballs.
  5. Heat olive oil in a large skillet over medium-high heat and brown the meatballs for 2-3 minutes per side.
  6. After browning, add chicken broth, remaining lemon zest, and lemon juice to the skillet.
  7. Return meatballs to the skillet, cover, and simmer on low for 15 minutes.
  8. Taste the sauce and adjust seasoning with salt and pepper.
  9. Plate the meatballs, garnish with parsley, and serve immediately.
