- Preheat your oven to 375°F (190°C).
- Finely dice the onion and parsley, and mince the garlic. Zest the lemon and then juice it.
- In a large mixing bowl, combine ground beef, breadcrumbs, egg, parsley, garlic, onion, lemon zest, oregano, salt, and pepper.
- Wet hands to prevent sticking and shape the mixture into 1½-inch meatballs.
- Heat olive oil in a large skillet over medium-high heat and brown the meatballs for 2-3 minutes per side.
- After browning, add chicken broth, remaining lemon zest, and lemon juice to the skillet.
- Return meatballs to the skillet, cover, and simmer on low for 15 minutes.
- Taste the sauce and adjust seasoning with salt and pepper.
- Plate the meatballs, garnish with parsley, and serve immediately.
