- Preheat your oven to 180°C (350°F).
- In a microwave-safe bowl, melt 90g of unsalted butter for about 30–50 seconds.
- Crush 1-2 cloves of garlic and chop 1 tablespoon of parsley. Stir them into the melted butter with a pinch of salt.
- Cut diagonal slashes across the top of the sourdough loaf without cutting all the way through.
- Spread the garlic butter mixture generously between the cuts of the bread, reserving some for later.
- Sprinkle a portion of grated mozzarella between the slices and reserve some for later.
- Wrap the loaf in aluminum foil and bake for 15 minutes.
- Unwrap and sprinkle reserved cheese on top and bake for an additional 5–7 minutes until golden and bubbly.
- Let cool for about 5 minutes, slice, and serve.
