  • 2 stalks Green Onions chopped

Preparation Steps
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Dice russet potatoes into small cubes, toss with olive oil, paprika, garlic powder, salt, and pepper. Spread on the baking sheet.
  3. Roast the potatoes for 25-30 minutes, flipping halfway until they are golden brown and crispy.
  4. In a skillet, heat olive oil and add ground beef or turkey, cooking for 5-7 minutes until browned. Drain excess grease.
  5. Stir in taco seasoning, tomato sauce, and water. Simmer for 5-7 minutes to blend flavors.
  6. Assemble the bowls with roasted potatoes, seasoned meat, shredded cheese, lettuce, tomatoes, and avocado.
  7. Garnish with sour cream, green onions, cilantro, and optional toppings. Serve immediately.
