Step-by-Step Instructions
  1. In a large mixing bowl, whisk together 1 cup of pumpkin puree, 2 large eggs, and 1 cup of milk until smooth. Add 1 teaspoon of vanilla extract, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground nutmeg, 1/4 teaspoon of ground ginger, and 1/4 teaspoon of salt. If desired, mix in 2 tablespoons of brown sugar. Let the batter sit for a few minutes.
  2. Place a skillet over medium heat for 2-3 minutes. Once hot, add a tablespoon of butter or oil and swirl to coat. Wait for the butter to bubble, but not brown.
  3. Dip each of the 4 slices of thick bread into the pumpkin batter, allowing them to soak for about 15-20 seconds on each side.
  4. Place the soaked bread slices in the skillet, cooking for 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes until done.
  5. Stack the cooked slices on a plate, drizzle with warm maple syrup, and garnish with powdered sugar or chopped nuts. Serve warm.
