For the Rice and Corn
  • 1 cup Jasmine or basmati rice Rinse thoroughly before cooking.
  • 1 cup Fresh or frozen corn Fresh corn preferred.
For the Toppings
  • 1 large Avocado Keep separate until serving.
  • to taste Fresh cilantro Use more or less as preferred.
  • 1 lime Lime Fresh lime juice is best.
  • 1/2 cup Cotija or feta cheese Cotija is preferred; feta is a substitute.

Method
 

Cooking Instructions
  1. Cook the jasmine or basmati rice according to package instructions, usually around 15-20 minutes.
  2. While the rice is cooking, season the chicken breasts with salt, pepper, and chili powder.
  3. Heat a large skillet over medium heat and add olive oil.
  4. Cook the seasoned chicken in the skillet for 5-7 minutes on each side until cooked through.
  5. Add the corn to the skillet in the last 3-5 minutes of cooking.
  6. Rest the chicken for 5 minutes, then chop into bite-sized pieces.
  7. Combine the cooked rice, corn, and chicken in a large mixing bowl.
  8. Serve in bowls and top with avocado slices, cilantro, lime juice, and cheese.
