- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, combine granulated sugar with fresh orange or lemon zest. Massage the zest into the sugar.
- Add softened butter to the citrus sugar and beat until light and fluffy, about 2-3 minutes. Add one egg, the egg yolk, vanilla extract, and gel food coloring.
- Whisk together flour, baking powder, and fine salt in a separate bowl. Gradually mix this into the wet ingredients until just combined.
- Scoop the dough into balls, roll in granulated sugar, and place on baking sheets spaced about 3 inches apart.
- Bake for 10-11 minutes until the edges are lightly golden. Let cool on the pan for 15 minutes before transferring to a wire rack.
- In a mixing bowl, beat together cream cheese and unsalted butter until smooth. Gradually add powdered sugar, then mix in vanilla extract and heavy cream to adjust consistency.
- Once the cookies are cooled, spread or pipe the cream cheese filling onto the bottom of one cookie and sandwich with another cookie.
