Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine granulated sugar with fresh orange or lemon zest. Massage the zest into the sugar.
  3. Add softened butter to the citrus sugar and beat until light and fluffy, about 2-3 minutes. Add one egg, the egg yolk, vanilla extract, and gel food coloring.
  4. Whisk together flour, baking powder, and fine salt in a separate bowl. Gradually mix this into the wet ingredients until just combined.
  5. Scoop the dough into balls, roll in granulated sugar, and place on baking sheets spaced about 3 inches apart.
  6. Bake for 10-11 minutes until the edges are lightly golden. Let cool on the pan for 15 minutes before transferring to a wire rack.
  7. In a mixing bowl, beat together cream cheese and unsalted butter until smooth. Gradually add powdered sugar, then mix in vanilla extract and heavy cream to adjust consistency.
  8. Once the cookies are cooled, spread or pipe the cream cheese filling onto the bottom of one cookie and sandwich with another cookie.
