Ingredients
  

Savory Sauce
  • 1/4 cup soy sauce tamari for gluten-free
  • 1 tablespoon fish sauce
  • 2 tablespoons brown sugar coconut sugar as alternative
  • 1 whole lime juice from fresh lime preferred
  • 1 tablespoon sesame oil toasted for stronger flavor
  • 1 tablespoon cornstarch arrowroot powder as substitute
Filling
  • 1 pound ground chicken or turkey substitute with chicken breast or lean ground beef
  • 1 tablespoon vegetable oil any neutral oil like canola or grapeseed
  • 3 whole green onions use both white and green parts
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 whole red bell pepper can substitute with other bell peppers
  • 1 cup carrots shredded
  • 1/4 cup cilantro or parsley as alternative
  • 1/4 cup peanuts or cashews or almonds as substitutes
Wraps
  • 1 bunch lettuce leaves romaine hearts or butter lettuce preferred

Method
 

Preparation Steps
  1. In a medium bowl, whisk together soy sauce, fish sauce, brown sugar, lime juice, sesame oil, and cornstarch. Set aside.
  2. Heat vegetable oil in a large non-stick skillet over medium-high heat. Add white parts of green onions, garlic, and ginger; sauté for 30 seconds.
  3. Add ground chicken; cook for 5-7 minutes until no longer pink.
  4. Stir in red bell pepper; cook for 2 minutes, then add carrots and cook for another 2 minutes.
  5. Pour the prepared sauce into the skillet, stirring to coat. Cook for an additional minute until the sauce thickens.
  6. Remove from heat; fold in green parts of green onions, cilantro, and peanuts.
  7. Spoon filling into lettuce leaves, adding optional toppings as desired.
