  • 1 cup Coconut Milk or heavy cream/almond milk
  • 2 tablespoons Lime Juice fresh preferred
For Garnish

Step-by-Step Instructions
  1. Begin by cutting boneless chicken breasts into bite-sized pieces, season with salt and pepper.
  2. In a large skillet, heat 2 tablespoons of oil over medium-high heat. Add chicken and cook for 5-7 minutes until browned and cooked through.
  3. In the same skillet, add more oil if needed, sauté minced garlic for about 30 seconds then stir in soy sauce, peanut butter, and coconut milk, simmer until thickened.
  4. Return the cooked chicken to the skillet, stir to coat in the sauce, and let simmer for 2-3 minutes.
  5. Remove from heat and serve over jasmine rice or rice noodles, garnish with peanuts and cilantro.
