- Preheat your oven to 375°F (190°C).
- Wash 6 ripe peaches and slice them into a large mixing bowl, aiming for about 6 cups of sliced peaches.
- In the bowl of sliced peaches, combine 3/4 cup of granulated sugar, 1 tablespoon of lemon juice, 2 teaspoons of cornstarch, and 1 teaspoon of vanilla extract. Let sit for 10 minutes.
- In a separate bowl, whisk together 2 cups of flour, 1/2 cup of sugar, 1 tablespoon of baking powder, and 1 teaspoon of salt. Cut in 1/2 cup of butter until the mixture resembles coarse crumbs.
- Pour in 1/4 cup of boiling water and stir until a sticky dough forms.
- Pour the peach filling into a greased 9-inch baking dish. Dollop the biscuit dough over the peaches.
- Bake for 38 to 42 minutes until the topping is golden brown and the peach filling is bubbling.
- Remove from oven and let cool for at least 15 minutes before serving.
