Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Wash 6 ripe peaches and slice them into a large mixing bowl, aiming for about 6 cups of sliced peaches.
  3. In the bowl of sliced peaches, combine 3/4 cup of granulated sugar, 1 tablespoon of lemon juice, 2 teaspoons of cornstarch, and 1 teaspoon of vanilla extract. Let sit for 10 minutes.
  4. In a separate bowl, whisk together 2 cups of flour, 1/2 cup of sugar, 1 tablespoon of baking powder, and 1 teaspoon of salt. Cut in 1/2 cup of butter until the mixture resembles coarse crumbs.
  5. Pour in 1/4 cup of boiling water and stir until a sticky dough forms.
  6. Pour the peach filling into a greased 9-inch baking dish. Dollop the biscuit dough over the peaches.
  7. Bake for 38 to 42 minutes until the topping is golden brown and the peach filling is bubbling.
  8. Remove from oven and let cool for at least 15 minutes before serving.
