Ingredients

For the Cake
  • 2 cups All-purpose flour You can try gluten-free flour for a gluten-free version, but texture may vary.
  • 1 cup Light brown sugar Granulated sugar can substitute, but may result in a dryer cake.
  • 1 teaspoon Salt
  • 1/2 cup Unsalted butter (cold) Margarine can be used in a pinch, though the flavor will shift.
  • 3/4 cup Unsweetened cocoa powder Avoid sweetened cocoa to maintain the right taste.
  • 1 teaspoon Baking powder Essential for helping the cake rise.
  • 1 teaspoon Baking soda Works alongside baking powder for optimal leavening.
  • 1 large Egg Flax or chia eggs can be used as a vegan alternative.
  • 1 teaspoon Vanilla extract Enriches both the cake and filling with warm flavor.
  • 1 cup Plain or vanilla yogurt Sour cream is a good substitute for similar results.
For the Cream Cheese Filling
  • 8 oz Cream cheese (room temperature) Consider using reduced-fat cream cheese for a lighter option.
  • 1/3 cup Granulated sugar Sweetens the cream cheese mixture.
  • 2 tablespoons Additional all-purpose flour Helps stabilize the filling.
For the Topping
  • 1/2 cup Chopped hazelnuts Swap for pecans or walnuts if you prefer a different flavor.

Equipment

  • mixing bowl
  • 9x13 inch baking pan
  • whisk
  • electric mixer
  • spatula

Method

Preparation
  1. In a medium bowl, combine all-purpose flour, light brown sugar, and a pinch of salt. Mix in cold unsalted butter until the mixture resembles coarse crumbs. Fold in chopped hazelnuts and refrigerate.
  2. Set your oven to 350°F (175°C) and grease a 9”x 13”x 2” baking pan. Preheating ensures even baking.
  3. In a mixing bowl, beat together cream cheese, granulated sugar, additional flour, egg, and vanilla extract until smooth. Set aside.
  4. In another bowl, whisk together the remaining flour, cocoa powder, baking powder, baking soda, and a pinch of salt.
  5. Cream together softened unsalted butter, granulated sugar, and light brown sugar until light and fluffy. Add eggs one at a time, incorporating fully.
  6. Gradually add the dry ingredients to the butter mixture, alternating with yogurt until just combined. Avoid overmixing.
  7. Spread the prepared cake batter evenly in the greased baking pan.
  8. Drop spoonfuls of the cream cheese mixture over the cake batter and gently swirl.
  9. Sprinkle the hazelnut crumb topping evenly over the cake.
  10. Bake for 40 to 45 minutes until a toothpick comes out clean. The top should be golden brown.
  11. Let it cool in the pan for 10-15 minutes before serving.
