- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a large mixing bowl, mash 2-3 ripe bananas until smooth, then add melted butter, sugar, egg, and vanilla extract. Mix until combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually fold this into the banana mixture until just incorporated.
- In a small bowl, mix together cinnamon and brown sugar. Set this aside.
- Pour half of the banana batter into the greased loaf pan, sprinkle half of the cinnamon mixture, then layer the remaining batter and cinnamon mixture.
- Using a knife or skewer, swirl the cinnamon mixture into the batter. Aim for a marbled effect.
- Bake for 60-70 minutes, until the top is golden brown and a toothpick inserted comes out clean. Tent with foil if needed.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
