Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, mash 2-3 ripe bananas until smooth, then add melted butter, sugar, egg, and vanilla extract. Mix until combined.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually fold this into the banana mixture until just incorporated.
  4. In a small bowl, mix together cinnamon and brown sugar. Set this aside.
  5. Pour half of the banana batter into the greased loaf pan, sprinkle half of the cinnamon mixture, then layer the remaining batter and cinnamon mixture.
  6. Using a knife or skewer, swirl the cinnamon mixture into the batter. Aim for a marbled effect.
  7. Bake for 60-70 minutes, until the top is golden brown and a toothpick inserted comes out clean. Tent with foil if needed.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
