- In a heavy-bottomed pot, heat olive oil over medium heat. Add diced onion, carrots, and celery, sauté for 5–7 minutes until softened.
- Stir in minced garlic, cooking for an additional minute until fragrant.
- Pour in chicken broth, add chicken breast, bay leaves, oregano, thyme, and red pepper flakes. Stir and simmer.
- Reduce heat, partially cover, and let simmer for 25–30 minutes until chicken is tender.
- Remove chicken, shred, and return to pot. Add pasta and cook for an additional 8–10 minutes.
- Remove from heat, stir in lemon juice and parsley. Adjust seasoning with salt and pepper.
