  • 2 pounds Beef Chuck Brisket can be used as a substitute.
  • 1 teaspoon Black Pepper Adjust based on spice tolerance.
For the Broth
  • 4 cups Beef Broth Low-sodium can be used.
  • 1/4 cup Soy Sauce Use tamari for gluten-free.
  • 2 tablespoons Brown Sugar Coconut sugar can be substituted.
  • 2 tablespoons Ginger (minced) Fresh is preferred.
  • 4 cloves Garlic (minced)
  • 2 tablespoons Sesame Oil Use olive oil as alternative.
  • 2 tablespoons Gochujang Sriracha can be used for less heat.
For the Noodles
  • 8 ounces Fresh/Dried Noodles Udon or ramen are ideal.
For Garnishing
  • 2 tablespoons Green Onions For garnish.
  • 1 tablespoon Sesame Seeds Optional.
  • 1/4 cup Fresh Cilantro Optional.

Method
 

Preparation Steps
  1. Cut the beef chuck into 1 to 1.5-inch chunks and season with black pepper.
  2. In a bowl, mix beef broth, soy sauce, brown sugar, minced ginger, minced garlic, sesame oil, and gochujang.
  3. Transfer the seasoned beef to the slow cooker and pour the sauce over it.
  4. Cook on low for 6-8 hours or high for 3-4 hours until beef is fork-tender.
  5. Cook noodles according to package instructions about 15-20 minutes before serving.
  6. Once beef is tender, gently stir in cooked noodles and allow to sit for 5-10 minutes.
  7. Serve in bowls garnished with green onions, sesame seeds, and cilantro.
