Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Cream together 1 cup of softened unsalted butter and ¾ cup each of granulated and brown sugar until light and fluffy.
  3. Beat in one large egg and the zest of one lemon until well combined before gradually mixing in the dry ingredients.
  4. Scoop tablespoon-sized portions of dough onto prepared baking sheets.
  5. Bake for 10-12 minutes or until the edges are lightly golden.
  6. Allow the cookies to cool on the sheets for about 5 minutes before transferring them to a wire rack.
  7. Place a scoop of blueberry ice cream on the flat side of one cookie, then press another cookie on top.
  8. Freeze the assembled sandwiches for at least 30 minutes.
  9. Remove from the freezer and serve, optionally rolling the edges in crushed blueberries or lemon zest.
