- Preheat your oven to 350°F (175°C).
- Cream together 1 cup of softened unsalted butter and ¾ cup each of granulated and brown sugar until light and fluffy.
- Beat in one large egg and the zest of one lemon until well combined before gradually mixing in the dry ingredients.
- Scoop tablespoon-sized portions of dough onto prepared baking sheets.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the sheets for about 5 minutes before transferring them to a wire rack.
- Place a scoop of blueberry ice cream on the flat side of one cookie, then press another cookie on top.
- Freeze the assembled sandwiches for at least 30 minutes.
- Remove from the freezer and serve, optionally rolling the edges in crushed blueberries or lemon zest.
