Method
 

Preparation Steps
  1. Shred the cooked chicken into fine pieces and pat it dry to remove excess moisture.
  2. Dice the red onion and soak it in cold water for 10 minutes, then drain.
  3. In a bowl, combine the shredded chicken, drained onion, cilantro, and diced avocado.
  4. Blend cottage cheese, mayonnaise, onion powder, and lime juice until smooth.
  5. Combine the dressing with the chicken mixture, folding gently.
  6. Slice cucumbers into thin rounds and pat them dry.
  7. Spread whipped cream cheese on each cucumber slice and top with chicken salad.
  8. Roll each cucumber slice up tightly and slice into bite-sized pieces.
  9. Garnish with everything bagel seasoning and chipotle hot sauce if desired.
