For the Seasoning
  • 1 tablespoon Lemon juice Prevents browning of avocado.

Method
 

Step-by-Step Instructions
  1. Toast the bread for 2-3 minutes until golden brown.
  2. Prepare the avocado spread by mashing avocado, lemon juice, salt, and pepper in a bowl.
  3. Spread a generous layer of avocado mixture on one slice of toasted bread.
  4. Layer cucumber slices evenly over the avocado spread.
  5. Add fresh leafy greens, red onions, and cherry tomatoes on top of the cucumber.
  6. Sprinkle with fresh herbs and drizzle olive oil if desired.
  7. Place the second slice of bread on top and press gently.
  8. Cut the sandwich in half diagonally and serve immediately.
