  • 1/2 teaspoon Bicarbonate of Soda
  • 1/2 cup Sunflower Oil Can substitute with melted coconut oil
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Mango Puree
For Buttercream
  • 1/2 cup Dairy-Free Butter Choose a brand that firms up when chilled
  • 2 cups Powdered/Icing Sugar
  • 1/4 cup Mango Puree

Step-by-Step Instructions
  1. Prep vegan buttermilk by combining dairy-free milk and apple cider vinegar. Let sit for 5-10 minutes.
  2. Mix dry ingredients: self-raising flour, caster sugar, baking powder, and bicarbonate of soda.
  3. Combine wet ingredients: vegan buttermilk, sunflower oil, vanilla extract, and mango puree.
  4. Mix wet and dry ingredients gradually, folding gently until just combined.
  5. Preheat oven to 180°C (350°F) and bake the batter in two prepared pans for 25-30 minutes.
  6. Make buttercream by whipping dairy-free butter, adding powdered sugar and mango puree until smooth.
  7. Assemble cake by layering the cooled sponge with mango buttercream and puree.
  8. Decorate the cake with desiccated coconut, buttercream swirls, and fresh mango chunks.
